Eating seasonally - consuming fruits and vegetables at their natural harvest times - offers numerous benefits, including enhanced flavor, higher nutritional value, cost savings, and environmental sustainability.  In North Carolina, spring brings a variety of fresh produce that can invigorate your meals. 


Benefits of eating seasonally

  1. Enhanced nutritional value - seasonal produce is harvested at its peak ripeness, ensuring optimal nutrient content.  For example, asparagus are rich in anti-inflammatory compounds and vitamins.  Asparagus is typically grown in the spring and picked around April and May. Frozen fruits and vegetables are picked at their peak ripeness then frozen.  These are a great option during the off season and at times can be cheaper. 

  2. Cost Savings - When fruits and vegetables are in season, they are often less expensive and can be bought locally at fruit stands and farmer’s markets.  

  3. Environmental Sustainability - Consuming seasonal and locally grown produce reduces the carbon footprint which is associated with out of season produce.
